Simple settings like my iMac os does. Grayed out text is nearly invisible to older eyes.
Any workarounds or suggestions? I already have fiddled around with my display settings.

Looks like from the other post you placed, someone has some kind of plugin for this. Not sure how you get it, but for the work space, you can change settings to be easier on the eyes. See this post on how to do that.
This could work well for someone doing 3d printing and is not concerned about representing materials and prefers simple colors.
