There are known problems with Layout 2015 under El Capitan. Other than backing out the El Cap upgrade, I don’t know of any fix. It doesn’t help at this point, but you should have read the warnings about upgrading to a not-yet-supported OS.

Is upgrading to SketchUp/LayOut 2015 an option for you? It should work on El Capitan in most respects.

If you’re an existing 2014 Pro user (with paid maintenance & support), SketchUp 2015 is a free upgrade.
If you’re a 2014 Pro user with expired maintenance & support, you can still get the upgrade by paying a reinstatement fee. Please contact the sales team to figure out exactly what’s possible.

Layout (8) gets stuck in Full Screen mode with no apparent way to Exit Full Screen
Do you mean LayOut 3? Is it the Presentation mode you’re getting into? Of course SU8/LO3 has not been supported for years and was never intended to run on El Capitan. It’s too not surprising there’d be issues.
