The over-stylised 3D blocks in the new Color Palette display makes it difficult to identify and distinguish colours, opacity, and textures.
How can I switch it off and revert to the original 2D flat swatch display of colours, textures and materials?

Is there a way in SketchUp 2025 to revert to the original material library? The new materials are quite distracting—many of them feature square patterns with sharp corners that face directly at the viewer. Additionally, several key materials like grass, water, and others seem to be missing.
You can copy material from old SketchUp installation to SU2025.
Here is one way, to do it:

Or download the old materials from 3D Warehouse.
Copy the Materials folder from:
C:\ProgramData\SketchUp\SketchUp 2024\SketchUp
and paste it into:
C:\ProgramData\SketchUp\SketchUp 2025\SketchUp
However, since you’re using a Mac, I’m not sure where your folders are located. But once you find them, the method should be the same—just copy and paste.
