I am trying to change the arc segment count on text/numbers drawn with the 3D text tool. After drawing the letter/number, when I select the arc and go to Entity Info, I can highlight the segment count but it will not let me change it.
Is there a way to do this?

First thing to understand is that the curves aren’t arcs or circles so natively you won’t be able to change the number of sides.
One option would be to use FredoSpline or Bezier Spline to convert the curves to Catmull splines or other splines and then increase the precision while editing the curves. Both extensions are available from Sketchucation.
