I noticed I still had Sketchup 2015 installed on my computer, along with the 2017 version. I made a few things in the old version– if I uninstall/delete it from my computer, will my files be inaccessible through the current program?

The latest SketchUp version can open files created by all prior versions, though you will get a warning during the open. The warning is a reminder that unless you do Save As to an older version, the file will no longer be readable by that older version.
Edit: unless you need the disk space, there is no need to uninstall older versions. Multiple versions can coexist on the same computer without problems.
