When I choose the materials tab in the window category - only the ‘color’ selector shows up… I cannot get at the eyedropper to copy paste material textures or anything.

everything else seems to work correctly - I have used sketchup pro in the office but have recently retired and want to do a few architectural things, so downloaded the trial version…

Command key while in the paint tool invokes the materials sampler (eyedropper). Does this not work?

The other eyedropper at the bottom of the color pallet is for sampling a single color anywhere on screen, useful for matching a color out of another program on screen.
