I am new to SketchUp …

How do you take a 3D imported model and flatten it into a 2D?

Go to the toolbar shown here:

Click Camera, then Parallel Projection and then click on any of the orthographic face icons to select a view.

Not sure why you would want to do that, but you can get 2D like view but the model is still a 3D model as you will note if you rotate it slightly. If you want true 2D model suggest you post the 3D version. The pro version will export to 2D but you did not post what you have so we are blind there.
TIG has a plugin called CADup but have not used you may want to check that;

I discovered SCALE and this is what I am trying to do. I want to make a video clip of going from full 3D to flat. I am going through tutorials, but if anyone can help with the process, I would be grateful.
