I had a computer crash (system, not layout specifically) that forced a hard shut-down as my system froze. Is there a chance that my 5+ hours of work in Layout is saved somewhere? I had neglected to save the file along the way as I was on a roll.
My guess is there’s a slim chance but you could look in the following. Note that AppData is a Hidden folder under your user name. You can make Hidden Folders visible in File Explorer. There might be a file there.
When you opened LayOut did the Welcome window show any recovered files to open?
Recovered files do show up when I open Layout, but this specific file does not appear. In the system folder that you referenced, there is a folder with timestamps that match today’s work. Do you know how I can get this info into a new file?
Open the folder and select the contents. Use an application like 7Zip to create a zip file of those files and folders. Change the extension from .zip to .layout. Move the file to your desktop or somewhere. You should be able to open it with LayOut, then. When you do that, immediately save it with your project name and update the SketchUp reference if needed.

I did need to download 7Zip, as the Windows “compress to zip file” did not successfully create a usable file.

I find 7 Zip to be very powerful for dealing with ZIP files. Note that if you have an issue with a LayOut file, you can extract copies of the references using 7 Zip without changing the extension.
