I am making a model similar to these shapes to then cut and build with plywood, in order to piece the cuts together, I will need to bevel the edges. I am curious if there is a method to find out the angles needed to cut the beveled edges?!

You can use a plugin (AngleInspector from Fredo6 e.g.) to measure the angle between the two faces and divide it by 2.
The miter angle = the dihedral angle / 2
I suggest you try Clark Bremner’s simple plugin: Angle Between Planes v1.0
All it requires is a right click on the common edge of two faces.
The dihedral angle is immediately displayed in the context menu.
