try the Bezier Tool from the extension warehouse…
I have never found a use for Freehand Tool…

I’ve just tried it but it looks hard to understand, I’m more used to bezier tool from another programs where there are some handles after drawing the initial line.
Is Bezier tool what people often use for things like that?
What you are seeing is inferencing. When you are zoomed out like that, the inferencing engine pushed a little harder to get you onto an inferenced point. Zooming in tighter will give you more control.
For an image like this, I would 100% agree with @john_drivenupthewall And recommend you use Bezier Tool.

When tracing an imported image, I find it useful to temporarily edit the edge style to set profiles to 3 or 4 and the edge color to something easy to see like red.
