About to click ‘buy’ for my 2018 Pro Single User licence and noted it says ‘To use your license with Sketchup Pro you must have internet access’. Is this just for the initial installation and activation? Wondering about when i need to work in areas offline ie on the plane.

That is correct, only for installation / licence activation purposes. SU2018Pro is a local installation and runs from your machine, so if you’re not connected to the internet it will still work fine (once registered, or within trial period).
You mention working on a plane, thus implying you’ll be using a laptop. Make sure the hardware requirements are met, else you may have trouble.
