So SU works in 1:1 to draw, but I create 1:25 models of my work to present ideas - at which stage am I able to scale down the drawings so they can be 3D printed at 1:25

Draw the model at 1:1. Then scale it down to the desired size.That’s easier than working out all the scaled dimensions and drawing the model at 1:25.
It would be a good idea to right click on the component and choose Scale Definition after you’ve scaled down.

I also understand that many “slicers” (the application that does the actual 3D printing) can do this scaling operation for you.
