And ironically, they don’t really save that much space - a normal stair with a half-landing takes up a similar volume with less “dead” space around the curves.
Question there . . Why not make the 3 middle steps a landing where they can turn before going up more stairs much easier to do in real life . . ?
A landing would eliminate 2 risers. It’s really just a large tread. So, the risers would need to be someplace else.

And that could be an issue if space is limited, so sometimes winders are the best compromise.
