I would like to link more than one file to a unique layout document. Is it possible? If so, how?

Sure it’s possible. In LO use File>Insert and insert the desired SKP file. Repeat for each different SKP file.

One other nugget: you can check-in on and maintain all the referenced files in a LayOut document from one place.
Go to File > Document Setup > References to see a record of all the files linked to in your LayOut document, their status (whether they are out of date), and also for the ability to manage and manipulate those referenced files.
