Instead of printing to PDF use File>Export and select the PDF option. Then print from Adobe Reader or whatever your preferred PDF viewer is. You have better control over what gets exported that way. This applies to LO2025, too.
I think that I have an even older Acrobat, might be 9.something. I have never printed to it from LayOut, but I’ll check its visibility when I get home. It has survived the update from Windows 10 to 11.
The small arrow I highlighted opens a popup menu where you can select between all printers that have been installed on your computer. If Adobe PDF is not on the list you have to install it from your original Adobe installer disc or file. Windows also automatically installs the Microsoft Print to PDF driver but that is quite limited compared to the Adobe one.
I cannot test that as I have updated both my computers to Windows 11. IMO the dialog should show all printers installed on your computer and it only shows one that is a network printer.
I always use the Export to PDF feature to get from LayOut to PDF.
