LAYOUT currently do not support (side to side view) of pages. (think of INDESIGN for a moment)
I wish there was a way I could create a book using Layout, does anyone know how?

Despite the lack of a page spread view, a book is of course doable in LayOut. If the facing pages need a different layout for repeating page elements like page numbers, i would create two separate layers for these elements, and turn them off or on on alternate pages.
