It’s not ‘editable’ because it’s a ‘report’ about a fixed property - e.g. volume.
I don’t think Entity Info like this has ever been selectable in any SketchUp version -
although I can see that being able to select it for copying to the clipboard for use elsewhere, could be useful in some scenarios…
Agreed the idea is not to edit the text, but instead to copy it so i can calculate something or put it into a schedule.
A few more steps than if you could select and copy it in Entity Info but you could use Report Generator to get the volume. For this example I’m only after the volume of one object so I didn’t bother adding any other attributes to the report.

Another option would be to use TIG’s Center of Gravity plugin and copy the volume from the text it generates.
I also have two volume calculators in the SketchUcation PluginStore - 13 years old but still working OK…
One reports the volume of a selected solid as ‘text’ [like my CoG with less info output], the other works similarly, but for any selected form including non-solids: this is of course it’s less accurate because it does it by multiple thin slicing, finally totaling the results, so you can easily devise a non-solid form that doesn’t slice at all well !
In my opinion it’s a feature degradation, so we can safely call this topic a bug report or a feature (back) request. ![]()

I see the issue in all of my installed versions, but I don’t go back as far as yours…
